OUR WINES

Our wines are made using grapes from our 9 hectares of unirrigated vines. Grape varieties are Garnacha, Syrah, Cabernet Sauvignon, and Merlot. Out of respect for nature, we work according to certified ecological guidelines. The vineyards are on a plateau at 777 meters of altitude, but only 100 kilometers from the coast, in a zone with both Mediterranean and Continental climates. The former confers the rainfall regime, about 200 liters per year, and the Continental brings a dry wind that helps keep the vines healthy. The clay-colored soils consist largely of sand, clay, and river sediments.

During the harvest, only healthy and ripe grapes are harvested by hand and the selection is made on the vine. By harvesting several times, we can respect the different soil structures in a plot and select only the best grapes for our wines. As the vines are planted around the winery, we have short transportation routes and the grapes arrive intact and fresh in the wine cellar.

The wine is fermented spontaneously in 1000-liter tanks with the grape's yeast. After fermentation, the wines macerate with the grape skins for three weeks and the daily “pigeage” brings out the aromas. Then carefully pressed using a pneumatic wine press. As the vines are planted around the winery, we have short transportation routes and the grapes arrive intact and fresh in the wine cellar.

The new vintage also undergoes the second fermentation, named malolactic. This second fermentation also happens spontaneously after the colder winter temperatures, after which the wine matures for 24 - 36 months in 500-liter French oak barriques.As the vines are planted around the winery, we have short transportation routes and the grapes arrive intact and fresh in the wine cellar.

We do not use any additives such as artificial yeast, tannins, acidity, or more...Contains sulfites.

With their southern warmth and round, finely structured tannins, our wines are the perfect accompaniment to food. Created with time and care, they slowly open up their harmonious aromas with every sip.

The wine can be stored for aging.
